Ingredients:


1. Paneer: 200 grams, cut into cubes
2. Onion: 2 medium, pureed and chopped
3. Tomatoes: 3 medium, pureed
4. Ginger-garlic paste: 1 tbsp
5. Green chillies: 2, chopped
6. Cashews: 1/4 cup, soaked in warm water
7. Fresh cream: 1/4 cup
8. Curd: 2 tbsp
9. Ghee or oil: 3 tbsp
10. Milk: 1/2 cup
11. Water: as required
12. Spices:
Bay leaf: 1
Green cardamom: 3-4
Cloves: 2-3
Cinnamon: 1 small piece
Turmeric powder: 1/2 tsp
Red chilli powder: 1 tsp
Coriander powder: 1 tsp
Garam masala: 1 tsp
Salt: to taste
Sugar: 1 tsp
13. For garnishing:
Fresh cream: 1 tbsp

Coriander leaves: chopped

Instructions:

1. Prepare cashew paste:

Soak cashews in warm water for about 15-20 minutes.

Drain the water and grind the cashews with some water to make a smooth paste.

2. Prepare the gravy:

Heat ghee or oil in a pan. Add bay leaves, green cardamom, cloves and cinnamon. Saute for a few seconds till the fragrance comes out.

Add finely chopped onion and saute till it turns golden brown.

Add ginger-garlic paste and green chillies. Saute for another minute till the raw smell disappears.

Lower the flame and add the beaten curd, keep stirring continuously to avoid curd from curdling.

Add the cashew paste and cook for 2-3 minutes.

Add the paneer pieces, milk and sugar. Mix gently.

Cover and let it cook on low flame for about 5-7 minutes, so that the paneer absorbs the flavours.

Add fresh cream and garam masala. Mix well and cook for another minute.

7. Garnish and serve:

Turn off the flame. Garnish with a tablespoon of fresh cream and chopped coriander leaves.
