The popular Cabbage Soup Recipe basically made with cabbage juliennes and choice of vegetables has a wide or another variation. This is a popular Anglo Indian soup diet recipe and is mainly served as a weight loss diet soup recipe. Having said that it is still an excellent starter or appetizer recipe and can be served just before lunch or dinner.
Well, to be honest, many people might believe that cabbage soup is only made with juliennes of cabbage. But the reality is that it is one of those vegetables that is used to make vegetable stock. Other primary vegetables used are carrots, beans and capsicum juliennes. This is not a complete list and further experiments can be done with other vegetables also. I personally don’t recommend you to use multiple vegetables and stick to a single root vegetable. Also, other supporting vegetables should not overpower the cabbage as we aim to make simple and healthy vegetable soup with cabbage. Apart from its health benefits, this is a filling soup recipe and can be served as a main for lunch and dinner. I prepare this when I have to eat something light. You can also add some leftover rice to make it a complete meal.

2 tsp olive oil
1 inch ginger, finely chopped
2 cloves garlic, finely chopped
4 tbsp green onion, chopped
2 cups pattagobhi, roughly chopped
1 carrot, chopped
½ capsicum, chopped
4 cups water
¾ tsp salt
1 tablespoon vinegar
½ tsp black pepper powder
2 tbsp mint, chopped
2 tbsp coriander, chopped

½ cup water

Instruction
- First of all, heat 2 tablespoons olive oil in a pan and add 1 inch ginger, 2 cloves garlic and 2 tablespoons green onion and fry.
- Add 2 cups cabbage, 1 carrot and ½ capsicum
Fry on high flame for 2 minutes until it shrinks slightly.
Next, add 4 cups water, ¾ tsp salt and mix well.(as per your taste)
Stir and boil for 2 minutes.- Also, take 1 tbsp cornflour and ½ cup water in a small bowl.
Mix well and ensure there are no lumps.

Add the cornflour slurry and boil for 2 minutes or until the soup thickens.
Now add 1 tablespoon vinegar and ½ teaspoon black pepper powder. Mix well.
Also, add 2 tbsp green onion, 2 tbsp mint and 2 tbsp coriander.
finally, enjoy cabbage soup recipe garnished with more green onions.
