Material:

Sugar
equipment:

Stovetop Espresso Maker (Cafetera)
coffee grinder
small container for espuma
demitasse cup
Instruction:

Grind coffee beans:
Start by finely grinding dark roast coffee beans, similar to an espresso grind.

Prepare the Cafetera:
Open the cafeteria and remove the filter basket. Pour the finely ground coffee into the filter basket, making sure it is evenly distributed.

Add water:
Fill the bottom chamber of the cafeteria with water. The amount of water depends on the size of your cafeteria. do not overfill.

Assembling and heating:
Reassemble the cafeteria, ensuring a tight seal. Keep it on medium flame. As the water heats up, it will build up pressure, forcing the water through the coffee grounds.

Make Coffee:
Once you see the coffee brewing in the upper chamber, reduce the heat to prevent the coffee from boiling too fast. Let the coffee brew completely.

Prepare Espuma:
While the coffee is brewing, take a small amount of prepared coffee and mix it with sugar in a separate container. Stir vigorously until you get a thick, sweet paste, called espuma.

Pour and mix:
Once the coffee is fully brewed, pour it over the espuma in your demitasse cup. The espuma will rise to the top, creating a sweet crust. Mix the coffee and Espuma together well.

Serve and enjoy:
Serve Cuban coffee immediately. The result should be a strong and sweet drink, with a layer of creamy espuma on top.
