Material

1 bunch kale, chopped
1 onion, chopped
2 carrots, chopped
3 cloves of garlic, finely chopped
1 can (15 ounces) white beans, drained and rinsed
1 can (14 ounces) chopped tomatoes
6 cups vegetable broth
1 teaspoon dried parsley
1 teaspoon dry henna
Salt and pepper to taste

Method of making

  1. Heat a large pot over medium heat. Add a splash of olive oil.

2. Fry the chopped onions until they become transparent.

3. Add the minced garlic to the pot and cook for another minute, until fragrant.

Add chopped carrots and continue frying for a few minutes.

4. Add vegetable broth, chopped tomatoes and drained white beans. Stir to combine.

5. Add dried oregano, dried rosemary, salt and pepper to the soup. Add spices as per your taste.

Then reduce the heat to low and let it simmer for about 15-20 minutes until the carrots are soft.

6. Add the chopped kale to the pot and cook for an additional 5-7 minutes until the kale is wilted but still vibrant green.
