Ingredients:
2 cups chickpeas (soaked overnight)
2 large onions (finely chopped)
3 large tomatoes (puréed)
1 tbsp ginger-garlic paste
2-3 green chilies (sliced)
1 tsp cumin seeds
1 bay leaf
2-3 black cardamoms
4-5 cloves
1 inch cinnamon stick
2-3 tsp chole masala
1 tsp red chili powder
1 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala
Salt to taste
Fresh coriander leaves (for garnishing)
3 tbsp oil
Lemon slices (for serving)
Making Recipe
- Kook chole
Cook the soaked chickpeas with water and some salt for about 6-7 whistles or till they turn soft. Cook till done. Drain the water and keep aside.
- Prepare the masala:
Heat oil in a large pan. Add cumin seeds, bay leaves, black cardamom, cloves and cinnamon. Saute till aromatic.
Add finely chopped onions and saute till golden brown.
Add ginger-garlic paste and green chillies. Cook till the raw smell disappears.
Add tomato puree and cook till the oil separates from the masala.
- Make it more flavourful:
Add chole masala, red chilli powder, turmeric powder, cumin powder, coriander powder and salt. Mix well and cook for a few minutes.
- Mix the chickpeas with the masala:
Add the cooked chickpeas to the masala. Mix well and simmer for about 15-20 minutes. Adjust the consistency by adding water if needed.
Sprinkle garam masala and mix well.
- Garnish and serve:
Garnish with fresh coriander leaves. Serve hot with lemon wedges.
- Bhature (Deep-fried Bread) Recipe:
Ingredients:
2 cups maida
2 tbsp semolina
1 tbsp curd
1 tsp sugar
1 tsp salt
1/2 tsp baking powder
Water (as required)
Oil (for deep frying)
Making Recipe
- Prepare the dough:
In a mixing bowl, combine maida, semolina, curd, sugar, salt and baking powder. Mix well.
Add water gradually and knead into a soft, smooth dough. Cover it with a wet cloth and keep aside for 1-2 hours.
- Shape the bhatura:
Divide the dough into equal portions and shape them into balls.
Roll each ball into a thick disc (about 6-7 inches diameter) with the help of a rolling pin. Do not add too much flour while rolling.
- Fry the bhatura:
Heat the oil in a deep frying pan over medium-high heat.
Carefully add the rolled bhaturas to the hot oil. Fry until they puff up and turn golden brown on both sides.
Remove and pat dry on paper towels.
Serve:
Serve the hot, puffed bhaturas with spicy chole, along with some pickles, sliced onions, and lemon wedges. Enjoy your delicious homemade chole bhature!
